Saflager S-23 Lager Yeast
This dry lager yeast—a favorite among Western European commercial breweries. This bottom-fermenting yeast shines when fermented at low temperatures (48°F to 59°F), yet it retains lager characteristics even at higher temps. For optimal results, maintain a temperature range of 48°F to 59°F during fermentation.
Pitching Instructions:
- Direct Pitching: Add the yeast directly.
- Rehydration (optional):
- Sprinkle yeast in 10 times its weight of sterile water or wort (about 4 oz).
- Let it rest for 15 to 30 minutes.
- Gently stir for 30 minutes.
- Pitch the resulting cream into the fermentation vessel.
